Kale Salad

1 bunch curly kale (large stems removed), chopped

1 bunch dinosaur kale (large stems removed), chopped

2 cups brussels sprouts, thinly sliced

1 ½ cups mint, julienne

1 ½ cups garbanzo beans

¾ cup dried cranberries

¾ cup sunflower seeds

Caper Mint Vinaigrette

1 cup coconut oil

2/3 cup white vinegar

handful of mint

2 TBL fresh rosemary

2 TBL capers

1-2 garlic cloves

3 TBL honey

1 TBL sea salt

pepper to taste..
